- 1 cup cooked corn kernel (roasted or grilled in the husk)
- 1⁄2 cup chipotle salsa (no substitutes)
- 2 ounces sharp cheddar cheese, grated fine
- 1 1⁄2 tablespoons sour cream
- 1 tablespoon minced fresh cilantro
- tostadas or corn chips, for serving
directions
- Mix all the ingredients together and refrigerate at least 30 minutes.
- Serve with tostadas or corn chips.
