Delicious Healthy Pea Soup

"I came up with this whilst dieting. It is very easy to just whip up and has a lovely flavour. I think the butter is essential for the flavour but you could use low fat oil if preferred, or if you are vegan. I use a low fat butter option. Freeze any that you don't use."

  • 1 tablespoon butter (low fat)
  • 400 g frozen peas
  • 1 white onion (large)
  • 475 ml boiling water
  • salt and pepper (to taste)
  • 1 vegetable stock cube
  • 2 garlic cloves (large)

directions

  • Melt butter in saucepan over medium heat.
  • Chop onion and crush garlic.
  • Slowly fry onion and garlic to release flavour until soft.
  • Add water and peas.
  • Simmer for 12-15mins.
  • Crumble over stock cube.
  • Remove from heat and blend in blender.
