- 1 cup shortening
- 1 cup brown sugar
- 1 cup sugar
- 2 eggs (Debbie adds 1 extra egg to make 3 eggs)
- 1 teaspoon vanilla
- 1⁄2 teaspoon cinnamon
- 1 1⁄2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 3 cups quick-cooking oats
- 1 cup walnuts (or combo of raisins and chocolate chips)
directions
- Cream shortening and sugars. Add eggs and vanilla. Beat well until creamy. Add flour, salt, and soda, which has been sifted together. Then add oatmeal and nuts. This makes a very stiff dough. Can refrigerate to stiffen dough a bit. Drop by teaspoons onto ungreased cookie sheets. Bake at 350 for about 10 minutes until golden brown.
- Let cool 5 minutes on sheet and remove to a wire rack for complete cooling. Store in a tight tin.
