DIRECTIONS

  • Preheat oven to 350.
  • Mix graham crackers, sugar and butter into large mixing bowl.
  • Pack crust into spring form pan. Bake for 10 minutes.
  • In a large mixing bowl, beat the cream cheese & sugar until very smooth (3 minutes).
  • Add eggs, one at a time; beating after each addition until smooth. Be sure to scrape the sides of the bowl.
  • Add lemon juice, vanilla, and salt. Beat until incorporated.
  • Mix in sour cream until just blended. Pour batter into crust.
  • Place a 9x13 pan with an inch of VERY hot water on the bottom shelf of the oven. Place cheesecake pan on the rack just above the water pan.
  • Bake for 45 minutes. Turn off oven without opening the door. Let the cake cool for an hour.
  • Remove cake from the oven and allow to cool on a rack until room temperature, about an hour.
  • Cover with plastic wrap and refrigerate overnight.
