- 3 pears (Cornice or Bartlett)
- 1⁄4 cup unsalted butter
- 1⁄3 granulated sugar
- 1⁄3 cup all-purpose flour
- 2 teaspoons vanilla extract
- 3 large eggs
- 3⁄4 cup milk
- 1⁄4 teaspoon salt
- confectioners' sugar
directions
- Preheat oven to 350°F Butter a 9-inch pie dish.
- Peel, halve and core the pears; slice into 1/4-inch thickness lengthwise. Arrange slices, overlapping slightly in dish.
- In a blender, process butter, sugar, flour, vanilla, egg, milk, salt until smooth.
- Pour batter over pears; bake until golden and firm to touch, 40-45 minutes. Serve warm or at room temperature, dusted with confectioners sugar.

This is one terrific dessert!! The pear and vanilla is a great flavor match; the fresh fruit lightens things up; and the golden pattern of sliced pears on top of the finished pie is very pretty (they float to the top during baking)! I made sure the oven was at the right temperature--then put the butter and dry ingredients into the blender, and the wet ingredients into a measuring cup--and then prepared the pears. That way I could make the custard, pour it over the fruit, and get the pie into the oven quickly--so the pears didn't have time to turn brown. I really love that this pie is not at all heavy or filling; it's the perfect sweet at the end of a meal! This recipe is most definitely a keeper! Thanks so much for sharing it, Chef mariajane!! <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
