Curried Quinoa and Lentil Salad

- 1⁄3 cup french green lentil
- 3⁄4 cup quinoa
- 4 1⁄2 cups water, divided
- 1 garlic clove
- 3⁄4 teaspoon salt
- 1 piece gingerroot, about 1 inch long
- 3 tablespoons lemon juice
- 2 tablespoons red wine vinegar
- 1 tablespoon curry powder
- 1⁄2 cup olive oil
- 1⁄2 bell pepper
- 1 green onion
- 1 medium cucumber (or half of an english cucumber)
- 2 tablespoons , amba sauce
- 1⁄4 cup raisins
directions
- Cook lentils in about 3 cups of water until tender. Refrigerate until cool.
- Combine Quinoa and 1/5 cups of water in a pan. Bring to a boil, and reduce to a low simmer until done - about 20 minutes. Refrigerate until cool.
- DRESSING: combine garlic clove, salt, ginger, lemon juice, red wine vinegar, curry powder, and olive oil in a blender (preferably a high speed blender) Blend until combined. set aside.
- SALAD: chop veggies into small pieces. combine lentils, quinoa, veggies, dressing, amba sauce, and raisins and gently fold together. Chill for a few hours to allow flavors to combine.

<p>I am a professional church musician. I am also a wife and mother. Cooking is my favorite hobby and I always come to food.com first when I'm looking for a new recipe! Indian is my favorite type of cuisine but my cooking is very eclectic (although I am a vegetarian so, no meat on my menu!). I love potluck meals - I think it is a great place to try out a new recipe! After all, if the recipe tanks, you can always deny ownership of the dish! LOL</p>
