Cucumber, Red Onion, and Radish Salad

"From Bon Appetit Weekend Entertaining, this sounds really fresh and good. The oil sounds like it's a little on the heavy side to me, so think that I will cut back on that and give it a shot by taste and consistency."

  • Combine first 3 ingredients in large bowl. (Can be prepared 3 hours ahead. Cover; chill).
  • Whisk oil, vinegar, sugar and red pepper to blend in small bowl.
  • Season with salt and pepper.
  • Pour dressing over vegetables; toss.

  1. I made this recipe as is. Pretty good. But we love lots of flavor. I made it again. Added garlic & added feta before serving. I also added herbs from my garden. It’s a very flexible recipe! Another way to use both English cucumbers & radishes! I’m about to make another bowl for tomorrow. Thanks.
     
  2. Had a gazillion cucumbers and radishes, so I thought this would be nice to try. The oil was a little heavy, bur I used olive, so I don't know if that mattered or not. But other than that it was really good. I didn't even let it marinate, just ate it as is. Add more veggies to the dressing left over, and let those refrigerate. Even better after that.
     
  3. This salad is fine but nothing special. I did use sweet onions as well like another reviewer rather than red. I used white vinegar to replace the white wine vinegar for religious reasons. I used a little cayenne instead of the dry crushed red pepper as it is what I had on hand. Made for Went to the Market Tag Game - April 2010.
     
  4. Yes, this really is fresh, light and good. I, too, thought the oil seemed a bit much, so I haved the amount of oil and added 1 more tbsp of vinegar. I used a Vidalia onion in place of a red onion, but the salad was still very colorful. Thanx!
