Cucumber Quick Salad

"This is from WSU extension office. With sugar you can season to taste. Use Splenda if needed or alternate sugar. For a creamier dressing, add a tsp. of mayo to sugar and mix into the vinegar."

• Yields: 2 cucumbers
• Serves: 4

ingredients

• 2 cucumbers, seeded and sliced
• 2 tablespoons sugar
• 1⁄2 cup rice vinegar
• 2 tablespoons water

directions

1. Rinse, dry, seed and slice cucumber.
2. Place in bowl.
3. In separate bowl, mix sugar, water and vinegar.
4. Pour over cucumbers and toss.
