- 2 cups whole wheat flour
- 1⁄2 cup oat bran or 1/2 cup wheat germ, plus extra for rolling
- 1⁄4 cup skim milk powder
- 1⁄4 cup dried mint
- 1 cup water
- 2 tablespoons canola oil
directions
- Preheat oven to 350°F.
- Mix flour, bran or germ, milk powder and mint in a large bowl.
- Add water and oil; stir to soft dough.
- Shape the dough into a log about 9-10 inches long.
- Roll the dough log in the extra bran/germ and transfer to an ungreased baking sheet. Flatten to about 4-5 inches wide.
- Bake 30 min - log should be firm. Remove from oven and allow to cool for a few minutes. Change oven temperature to 300°F.
- Use a sharp knife to cut the log into 1/2-inch biscotti strips.
- Place the strips upright on the cookie sheet, spaced about a half inch. Bake for 30 minutes. Do not remove from oven.
- Turn oven off, but leave the cookies in the oven to become hard as they cool.
