Crunchy Herbed Salmon

- 1⁄2 cup chopped pistachios
- 1 tablespoon chopped of fresh mint
- 1 tablespoon chopped fresh cilantro
- 2 tablespoons corn oil
- 1 lb salmon fillet (4)
- salt and fresh pepper
- cooking spray
directions
- Pre-heat oven to 450 f.
- Combine the pistachios, fresh herbs, and corn oil.
- Season the salmon with salt and pepper.
- Line a baking sheet with tin foil, and coat with cooking spray. Place the salmon on the foil, and then coat the salmon evenly with the pistachio mixture. Press the mixture in slightly.
- Bake 10 minutes or until the fish flakes easily with a fork.
- Garnish with fresh mint leaves and serve with rice if you like. I think I'll try this with wilted spinach and garlic.

Don't think this did much for my period pain (well, who really knows!) but it did wonders for my taste buds! I LOVE pistachios & salmon, so this one was right up my alley! The nuts were finely chopped as were the herbs, & that combo made for a wonderful tasting salmon! Thanks for sharing! [Made & reviewed as a kidnapped recipe in the Aus/NZ Recipe Swap #16]
