- 8 catfish fillets
- 1 1⁄2 cups nonfat milk
- 2 tablespoons Dijon mustard
- 5 cups corn flakes cereal, squares
- 1⁄4 cup cornstarch
- 1⁄2 teaspoon pepper
- 3⁄4 teaspoon salt, divided
- vegetable oil cooking spray
directions
- Preheat oven to 365°F Cut each fillet lengthwise into 3 strips Sprinkle fish with 1/2 salt.
- Whisk together milk and mustard in a small bowl, combine cereal, cornstarch and pepper along with rest of salt. Dip fish into milk mixture. Roll around in crushed cereal mixture. Arrange fish on a baking sheet coated with a cooking spray. lightly spay fish with spray.
- Bake at 370°F for 20 to 22 min or until fish falls apart with a poke of a fork. Serve with tarter sauce of ketchup.
