This is a great "I don't have time" dish. You just put everything in the crock pot that morning, come home from work that afternoon and dinner is smelling good and waiting on you. Goes really good with a good salad and cooked pasta of your choice. This recipe was given to me after I had weight loss surgery.

  • Put the chicken in a crock pot.
  • Season with salt & pepper: top with remaining ingredients. Season with more salt & pepper.
  • Cook on LOW 7-8 hours.
  • During the last 30 minutes put crock pot on High, sprinkle on the Mozzarella Cheese to melt.

    Forgot the cheese and used both red and green peppers. Served over brown rice. Will make again!

    I didn't think this looked like the chicken cacciatore I have had before, it was really liquidy because of the chicken broth that came from cooking the chicken, but it tasted all right. DH apparently doesn't like chicken cacciatore, and my friends seemed unimpressed.

    We really enjoyed this tasty dish. I did find it a bit runny but the flavor was so good. I used breast and served it over noodles. I also sprinkled additional cheese on top. Thanks for posting. :)
