Creamy Broccoli Quiche

  • Preheat oven to 375 degrees Fahrenheit
  • To prepare crust combine flour, salt and chilled lard in a small bowl. Cut lard with a pastry blender or 2 butter knives into the size of small peas.
  • Add ice water to mixture and stir with a fork until mixture forms a ball and comes away from the sides of the bowl.
  • On a flat surface dusted with flour roll out the dough to fit a 9" pie plate and then trim the edges of crust and then flute the edges around the plate. Put aside
  • Cook broccoli florets in boiling salted water for 5 to 7 minutes just until tender. Remove from heat and drain through a colander. Put aside
  • Fry onion in canola oil and cook until translucent. Allow to cool
  • When chopped onion has cooled spread it on the bottom of pie plate to cover the surface entirely
  • Sprinkle grated cheese over top of onion and then spread sausage slices over top of cheese
  • Assemble broccoli florets over grated cheese covering the entire surface
  • In a large bowl combine cream, eggs and salt together. Whip with a wire whisk until light and frothy
  • Add dry ingredients to wet mixture and stir until batter is smooth and free of lumps
  • Pour creamy sauce over top of all ingredients in pie plate and allow sauce to reach the edges of the plate
  • Bake in preheated oven for 30 to 35 minutes until lightly browned
  • Remove from oven and allow to cool before slicing into wedges.
  • Serve with a green salad as a main course dish.
