Creamy Baked Pork

• Serves: 6-8

ingredients

• 3 tablespoons olive oil
• 3 lbs pork (cubed)
• 3 tablespoons olive oil
• 3 tablespoons butter
• 7 cups onions (sliced thin)
• 6 tablespoons flour
• 3 cups evaporated milk
• salt & fresh ground pepper (to taste)
• 2 cups swiss cheese (grated)
• 1 cup fresh dry whole wheat breadcrumbs
• 1⁄4 cup butter (chopped)

directions

1. Heat oven 400.
2. Heat oil in a skillet. Brown pork in batches.
3. Remove all to a plate. Season.
4. To skillet add the oil and butter.
5. Add onions. Saute 15 minutes.
6. Stir in flour. Cook 1 minute.
7. Stir in milk. Bring to a boil. Reduce. Simmer 15 minutes. Season.
8. Remove from heat. Layer onion mix, pork and cheese in a sprayed 9x13.
9. Top with crumbs. Dot with butter.
10. Bake 20 minutes.

This was SOOO good! The prep work took a bit more time than I expected..but I did it the day before I was going to serve it..and found this to be quite helpful ..the cooking time was fairly quick. WIll make this again..Thanks, Lori, for sharing!
