  • Brown the chicken in the oil, cut into bite size pieces. Do not overcook.
  • Add remaining ingredients and simmer, making sure the cream cheese gets incorporated. (This software would not let me designate "Chicken Rub" as an ingredient but that is the name of Emeril's "poultry seasoning" I used.) Serve separately or over rice, quinoa, etc.
