- 1 (15 ounce) can whole kernel corn, drained
- 1 (16 ounce) can black beans, rinsed & drained
- 2 large tomatoes, seeded & diced
- 1 medium red onion, chopped
- 1⁄4 cup minced fresh cilantro
- 2 garlic cloves, minced
- 2 tablespoons white sugar
- 2 tablespoons white vinegar
- 2 tablespoons canola oil
- 1 1⁄2 teaspoons lime juice
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon ground cumin
- 1⁄4 teaspoon ground pepper
directions
- Mix Corn, beans, tomatoes, onions, & cilantro in large bowl.
- In separate bowl mix garlic, sugar, vinegar oil, lime juice, salt, cumin & pepper.
- Approximately 1 hour before serving mix dressing with veggies and refrigerate. Serve with tortilla scoops.
- Veggies can be prepared the day before, just keep the onions seperate & the dressing separate.
