Copycat Campbell's Tomato Soup

I found this recipe on rainy day gal's blog. I haven't tried it yet but am putting it here for safe keeping. I'm always on the search for a good copycat for Campbell's tomato soup as it has high fructose corn syrup in it and we are arch enemies.

  • Add first six ingredients to a medium pot and place over medium heat.
  • Bring to just a simmer.
  • Slowly stir in milk.
  • Heat to simmer or desired serving temperature.
  • Serve.

    Is this only for those use milk instead of water. My mom used water so I’m particular.

    Tasted exactly like Cambells. The only thing I added was 1/4 tsp of basil and pepper to taste. Definitely added it to my recipe collection. Thanks for posting it.

    My son is a VERY picky eater. One of the meals he loves is Grilled Cheese and Tomato Soup. He insists on Campbell's Tomato soup. He had a craving the other day and I had no soup. TA-DA! Your copy-cat Campbell's Tomato soup saved the day and guess what? He likes it BETTER than Campbell's! Life saver! I'll never buy it again, this is so easy to make! Love it!

    Since we don't have tomato sauce or tomato paste, I made about 1 cup of this with 1/2 cup crushed tomatoes, 1/2 cup milk, 1/2 tbsp. sugar, a dash of garlic, and a few shakes of salt. My husband added more salt and about 1 tbsp. of margarine at the table. He liked it, and I did too (although the chunks of tomato from the crushed tomato were a little weird.) And that's saying something since he likes canned tomato soup and I don't. Congratulations, you've helped us find a version of tomato soup that we both like. :) Thanks!
