Cool Cucumber Pasta Salad

"This is a great summer salad that tastes super with any grilled meat. The longer it marinates the better! The ingredient are things I normally have in the house so it's easy to whip together. It from a '97 TOH and it has become a favorite at this house. The cooking time listed would be cooking the pasta. Hope you enjoy it as much as we do."

Ready In:




  • Cook the pasta according to package directions; drain and rinse in cold water.
  • Place in a large bowl.
  • Stir in oil, cucumbers and onion.
  • Combine remaining ingredients and pour over salad and mix.
  • Cover and chill 3-4 hours, stirring occasionally.
  • Serve with a slotted spoon.

  1. A really good alternative to regular pasta salad. Only change I will make next time is to make it a little less sweet. My nephew loved it just the way it is, but majority rules in our house, and the rest of us like it just a little more tart.
  2. This is really good and simple. Great salad for picnics, no mayo. I used macaroni because that's what I had on hand. This would be good with tomatoes and or green peppers added as well. Thanks for the great recipe.
  3. I’ve made this a few times. It does need less sugar or it’s overkill. This time I used a lemon flavored pasta, purple onion and add red bell for color. About 1/3 cup of sugar and garlic powder instead of garlic salt.

  4. This was very good! I used 3/4 cup sugar, and 1/2 cup vinegar and 3/4 cup water. I also added green peas that were frozen. I will make this again, for sure! Thanks so much.
  5. Make this alot. I use rigatoni and just a little less sugar. The longer this sets the better it gets, but it doesnt last that long in my house. Also dice my cukes and onions.Always make for reunions and always get asked for recipe.

My grandmothers were very good cooks and I have fond memories of the meals they prepared. We love entertaining and nothing pleases me more than having my family and others enjoy the food I make. I love it when the house smells good with dinner or whatever is baking. I came upon recipezaar searching for a rhubarb cake recipe one day. The recipe I chose was a 5 star and my addiction began. It took a few months before I started really utilizing the site but once I did my cooking has never been the same. Eating out when we are traveling is the best. I'm trying to learn more about the restaurants and chefs in places we are visiting so we can try and visit those restaurants and enjoy some of the great places our town just doesn't have. <br /> <br />The whole family loves to ski and we look forward to the season every year - it makes winter tolerable. Renting movies or just hanging out with friends is the making of a relaxing weekend for us.</p>
