Company Mac and Cheese

  • Cook macaroni according to package directions.
  • Meanwhile, melt 4 tablespoons butter in a large saucepan.
  • Stir in flour until smooth.
  • Gradually add milk.
  • Bring to a boil; cook and stir for 2 minutes.
  • Reduce heat; add cheeses, mustard, salt and pepper.
  • Stir until cheese is melted and sauce is smooth.
  • Drain macaroni; add to the cheese sauce and stir to coat.
  • Transfer to a greased shallow 3-quart baking dish.
  • Melt the remaining butter; toss with bread crumbs and parsley.
  • Sprinkle over macaroni.
  • Bake, uncovered, at 400ºF for 15 to 20 minutes or until golden brown.

    This is also my "go to" recipe for mac and cheese...Chef 663892..the recipe calls for TWO boxes of 7 oz macaroni...I use rotini and other kinds of pasta for the most part...

    This mac and cheese was creamy as promised, but the taste was just ok. I actually found it quite bland, and was surprised by that. Also I had to use a 16 oz box of macaroni unlike the recipe calling for a 7 oz. box.I had at first cooked only half the box but the macaronis were swimming in the cheese sauce like it was soup, so I cooked the other 1/2 box and added it, making it the right consistency. Good recipe, just not Great. I think next time I'll try it and add some dehydrated onions for flavor and maybe some other types of cheese in the mix.

    My family enjoyed the company mac n' cheese and already they've asked that I make it again. It is super easy to make. My only change would be to use less bread crumbs 3/4 cup was a little too much for us. Thanks for the great recipe.
