Coconut Oat Drop Cookies

"Our family's favorite cookies. They pack a LOT of flavor, but are not decorative cookies. They came from my MIL, who is now afflicted with Parkinson's and cannot recall the many times we made them together over the years. We eat them and remember happier times. :-)"

  • Preheat oven to 350.
  • Sift dry things, stir in oats.
  • Cream shortening and butter, beat in sugars.
  • Add eggs, vanilla and cream until fluffy.
  • Stir in dry stuff.
  • Add nuts and coconut.
  • Drop 1 1/2 diameter blobs onto a greased baking sheet.
  • Bake@ 350 10-15 minutes.

Originally from the Midwest, I have lived in New Orleans for decades--my waistline shows it! It's a fabulous foodie city, with new restaurants constantly opening. Travel is very important to me, and we do a lot of that. My photography "habit" and travel go together nicely, as does a growing passion for birding and its associated travel.
