- 1⁄2 cup butter
- 1⁄2 cup sugar
- 2 eggs
- 1 1⁄2 cups self-rising flour
- 1⁄4 cup flaked coconut, small flakes
- 2 tablespoons milk
directions
- Cream the butter and sugar together until light and fluffy.
- Beat in eggs one at a time, adding a little flour with the second.
- Fold in remaining flour, coconut, and milk.
- Turn into a greased and floured loaf tin. Bake in a preheated oven at 350 degrees for 60-75 minutes.

<p>I'm a journalism and French major at the University of Georgia who discovered the joy of cooking a couple of years ago.
