Coconut Corn Squares

ingredients
- 1 cup plain flour
- 1 cup yellow cornmeal
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 eggs
- 1 cup milk
- 90 g butter, melted
- 1 cup coconut
directions
- Sift flour, cornmeal, sugar, baking powder, salt and cinnamon together in a large bowl.
- Break eggs into a smaller bowl, add milk and melted butter.
- Add coconut and stir till well combined.
- Make a hole in the centre of flour.
- Pour in milk/coconut mixture.
- Stir till just combined.
- Grease a shallow 20 cms square tin.
- Spoon in the batter.
- Bake at 200 C for about 35 minutes.
- Cool on wire rack and cut into 9 large squares.
- Serve with butter and jam.

This was a fun twist on your standard cornbread. I especially loved the cinnamon. I subbed gluten free flour and brown sugar. I also added a touch of vanilla. While the texture of the coconut was present, I felt the flavor was slightly lacking so I think that next time I may toast some of the coconut. The bread itself was a little dry so I'll add a little extra milk as well. I liked that this wasn't overly sweet. Thank you for posting! Reviewed for ZWT - 7.
