DIRECTIONS

  • Crush bananas.
  • Mix bananas, coconut oil, and eggs in a Kitchenaid mixer or with a hand mixer.
  • Add flour, soda, salt, vanilla and mix again.
  • Add coconut and chocolate chips and blend in by hand.
  • Pour into a greased loaf pan (or muffin pan if you'd prefer muffins - cut baking time to 20-25 min.).
  • Bake for 50-60 minutes in a preheated 350 degree oven.
