Cinnamon Beef Tagine

  • Sprinkle the beef with salt & pepper then coat with flour. Heat 1 tablespoon of oil in a tagine over medium-low heat.
  • Add the onion & beef then saute until the beef is brown on all sides (around 5 minutes). Pour in the broth & the spices. Cover with the lid & cook for 45 minutes.
  • Uncover & stir in the squash & sweet potatoes. Add 1 cup of water if needed. Turn the heat to low, recover, & continue to cook for 45 minutes or until the vegetables are tender. Stir in raisins.

  1. A nice, rich beef flavour with a touch of the exotic. Easy to make. I would have liked a few more vegetables and a bigger variety (perhaps some potatoes next time, or green beans, or chick peas) and a thicker sauce or perhaps just a lot less liquid. In the end, I thickened it with a bit of cornstarch. I made it in the crockpot (about 6 hours cooking) so maybe that made a difference to how the broth cooked.
     
  2. We really enjoyed this with rice (DH hates couscous for no earthly reason at all!) I added a spritz of lemon just before serving because we found it a tiny bit sweet for our taste BUT saying that loved the depth of flavours. Will make again and try to adapt for the crock pot.
