CHUNKY APPLE SPICE CAKE
- 1⁄2 cup butter, softened
- 1 cup light brown sugar, firmly packed
- 2 eggs
- 2 teaspoons vanilla
- 1 cup flour
- 1 tablespoon pumpkin pie spice
- 1 teaspoon allspice
- 1⁄2 teaspoon salt
- 2 cups apples, peeled and chopped
- 1⁄2 cup walnuts
- 1⁄2 cup raisins (optional)

VANILLA BUTTER SAUCE
- 1⁄2 cup butter or 1/2 cup margarine, melted
- 1⁄2 cup whipping cream
- 1 cup light brown sugar, firmly packed
- 2 tablespoons vanilla
directions
- Preheat oven to 350°F.
- Beat butter and brown sugar for 5 minutes in a mixing bowl.
- Beat in eggs and vanilla until blended. Set aside.
- In a separate bowl mix flour, pumpkin pie spice, allspice and salt.
- Gradually add to sugar mixture; beating until well blended.
- Stir in apples, nuts and raisins (if desired).
- Pour into a greased 9 inch baking pan,.
- Bake 35-40 minutes or until toothpick inserted in center comes out clean.
- Cool on a wire rack for 10 minutes. Serve warm with Vanilla Butter Sauce.

VANILLA BUTTER SAUCE:
- Combine butter and whipping cream with brown sugar.
- Bring to a boil over medium heat.
- Reduce heat; simmer for 10 minutes or until slightly thickened.
- Remove from heat; stir in vanilla.
- Serve warm over cake.

My entire family just LOVES this cake. It was pretty easy to make, too. I used 1 big gala apple and omitted the raisins. We can't stand baked raisins. The sauce really makes this special. We keep it in a separate bowl and reheat it as needed. The cake holds up well, too. We made it a few days ago, and we've kept it uncovered in the oven. It hasn't gone stale yet. I didn't have a 9" baking pan, so I had to use a 9x13 casserole. I think it's too shallow, but it turned out well. This cake is pretty enough to serve to company or in a buffet. 5 stars! Made for fall PAC 08.
