Chumley's Shrimp Skewers

- 8 ounces whole grain pasta
- 1 lb medium raw shrimp, peeled and deviened

Sauce
- 1⁄4 cup olive oil
- 1 medium shallot, small diced
- 2 garlic cloves, minced

Basting
- 1⁄4 cup fresh lime juice - 2-3 lime
- 1 1⁄2 tablespoons fresh dill, fine chopped
- 1 tablespoon melted butter
- Pam cooking spray
directions
- Cook pasta per box directions, set aside.
- Put shrimp on skewers, 6-8 per skewer.
- Heat grill or stove top ribbed griddle.
- Heat a small skillet over medium heat. Add olive oil, shallot and garlic. Saute until onion is soft, about 3-4 minutes, set aside.
- Combine lime juice, dill and melted butter in a small bowl.
- Spray grill or griddle with Pam. Place shrimp skewers on grill basting them with the lime juice mixture while cooking, about 3 minutes per side. Do not over cook.
- Pour remaining lime juice mixture into the olive oil, shallot and garlic mixture, reheat if needed.
- Put pasta onto a serving platter, put skewered cooked shrimp on top of the pasta, pour the olive oil and lime juice mixture over the top of everything.
- Serve with Italian bread to sop up the juice.

<p>I love to cook. I'll try and cook anything once, truthfully, I've had some disasters. That is half of the fun. I like to cook for alot of people, cookouts, holiday dinners for friends and family, that sort of thing. I still enjoy doing the day to day stuff. My wife and girls are kind of picky eaters but they are starting to try differnet things. Since I lost my job I have more time to play in the kitchen. My pet peeve is watching a food commercial where the father is shown to be like a kitchen moron and has to do frozen or take out. I think alot of us dads could do circles around some of the women cooks. <br />My favorite pasttimes are fishing and miniature golf tournaments. Yes, miniature golf tournaments. It's a blast and you get to meet some great people and play in Maine, Connecticut, or where ever you want to go, chances are there is a tournament near you and you don't even know it. We've been playing in them since 2005.</p>
