- 1 1⁄4 cups dark brown sugar
- 1⁄2 cup butter
- 1 egg
- 1⁄4 cup molasses
- 2 tablespoons minced crystallized ginger
- 1 teaspoon vanilla
- 1 large pinch clove
- 1 large pinch cinnamon
- 1 1⁄2 cups flour
- 1⁄2 cup unsweetened dutch process cocoa
- 3⁄4 teaspoon salt
- 3⁄4 teaspoon baking soda
- coarse sugar
directions
- Beat sugar and butter until fluffy. Add egg, molasses, ginger, vanilla, cinnamon, and cloves.
- Whisk flour, cocoa, salt, and baking soda. Stir into the butter mixture.
- Do no chill dough. Drop by tablespoonfuls and sprinkle with coarse sugar and bake at 350 8 to 12 minutes.
