Chocolate Coca-Cola Cake With Chocolate Coca-Cola Icing

Prepare the icing during the last 10 minutes of baking so it is ready to spoon on to the warm cake. This was in Coastal Living, April 2006, developed by Ashley Strickland.

  • Preheat oven to 350º.
  • MAKE THE CAKE:

  • Combine first 3 ingredients in a medium saucepan over medium heat, stirring until butter melts.
  • Remove from heat.
  • Combine flour, sugar, and baking soda in a large bowl, stir in butter mxiture.
  • Add eggs, and stir until well blended.
  • Stir in buttermilk, vanilla, and marshmallows.
  • Pour into a lightly greased 13x9" baking pan.
  • Bake for 25-30 minutes or until a pick inserted in the center comes out clean.
  • Remove from oven; spread icing over warm cake.
  • ICING:

  • Combine first 3 ingredients in a medium saucepan over medium heat, stirring until butter melts.
  • Remove from heat; stir in powdered sugar, vanilla, and pecans.
  • Spoon immediately over warm cake.

    This is just for the cola icing. I was getting ready to add my college friend's mother's cola icing when I found yours here. I didn't add the nuts when I made the icing. It is really tasty...just a notch above plain chocolate icing!

    I have fixed this cake twice now and it disappears very fast. I didn't get the recipe from here... my sister has a cookbook with it in it. But the ingediants are pretty much the same. It's the best, most moist cake I've ever eaten and since I substitute buttermilk, con. sugar, and butter with fat-free buttermilk, light con. sugar, and light butter it's a lot healther than a store-bought cake. That's the good thing about making a cake from scratch... you can make it the way you want it. Thanks so much for this recipe... it's delicious!!

    This cake was ok, it was a bit dense for our taste. The frosting however was AMAZING! I was trying to recreate the Cracker Barrel cake and this just wasn't it, but I swear the BEST hot fudge chocolate frosting I have ever had!
