CAKE
- 1 cup butter
- 1⁄3 cup cocoa
- 1 cup cola drink
- 2 cups all-purpose flour
- 1 1⁄3 cups sugar
- 1 teaspoon baking soda
- 2 large eggs
- 1⁄2 cup buttermilk
- 1 teaspoon vanilla extract
- 1 1⁄2 cups miniature marshmallows

ICING
- 1⁄2 cup butter
- 1⁄4 cup cocoa
- 1⁄3 cup cola drink
- 3 cups powdered sugar
- 1⁄2 teaspoon vanilla extract
- 1 cup chopped pecans

- Preheat oven to 350º.

MAKE THE CAKE:
- Combine first 3 ingredients in a medium saucepan over medium heat, stirring until butter melts.
- Remove from heat.
- Combine flour, sugar, and baking soda in a large bowl, stir in butter mxiture.
- Add eggs, and stir until well blended.
- Stir in buttermilk, vanilla, and marshmallows.
- Pour into a lightly greased 13x9" baking pan.
- Bake for 25-30 minutes or until a pick inserted in the center comes out clean.
- Remove from oven; spread icing over warm cake.

ICING:
- Combine first 3 ingredients in a medium saucepan over medium heat, stirring until butter melts.
- Remove from heat; stir in powdered sugar, vanilla, and pecans.
- Spoon immediately over warm cake.

I have fixed this cake twice now and it disappears very fast. I didn't get the recipe from here... my sister has a cookbook with it in it. But the ingediants are pretty much the same. It's the best, most moist cake I've ever eaten and since I substitute buttermilk, con. sugar, and butter with fat-free buttermilk, light con. sugar, and light butter it's a lot healther than a store-bought cake. That's the good thing about making a cake from scratch... you can make it the way you want it. Thanks so much for this recipe... it's delicious!!Reply
