Chocolate Cake

"This is our family's favorite chocolate cake. The addition of coffee makes a rich tasting cake. Also the oil instead of butter is healthier. I sometimes add grated orange peel."

ingredients

• 2 cups flour
• 1 3⁄4 cups sugar
• 1 1⁄2 teaspoons baking soda
• 1 teaspoon salt
• 1⁄2 cup cocoa
• 1 cup sour cream
• 1 cup cold brewed coffee
• 1 large egg
• 2⁄3 cup canola oil

directions

1. Mix dry ingredients.
2. Add wet ingredients and beat well.
3. Pour into greased 9 x 13 pan.
4. Bake 350° for 30-35 minutes.

this was excellent! i followed this exactly. i did have to bake it for 45 minutes but i baked it in pyrex which usually takes longer. very moist and rich with great flavor. i sprinkled the top with confectioners sugar, but this would be great with chocolate frosting too. so glad i pickled this for PAC.
