  • Preheat oven to 350 degrees. Grease a 8 ½ x 4 ½ inch loaf pan.
  • Using a hand mixer cream butter, sugar and peanut butter in a bowl. Add eggs one at a time and mix.
  • In a separate bowl whisk together the flour, cocoa powder, baking soda, salt and cinnamon. Add the mashed banana to the creamed sugar and beat until incorporated. Add the dry ingredients and mix until just combined. Stir in half the chocolate chips by hand and pour the batter in the loaf pan. Sprinkle the remaining chocolate chips on top.
  • Bake for 45-50 minutes until a toothpick inserted into the cake comes out clean. Once cooled, remove banana bread from loaf pan. Drizzle with melted peanut butter. Slice and serve.

  2. Whole family loved it! Made this gluten free by using Bob’s Red Mill 1 to 1 baking flour. Ours was super moist and tasted more like a chocolate cake than bread. Next time, I may just skip the chocolate chips on top and see if it’s still five stars. Also, we did not make the topping since everyone started eating it right away.

Tweaks

  1. Great recipe! Made it with a few tweaks. -Used half cup of butter with half cup canola oil -Used Dutch processed cocoa instead of regular cocoa. To compensate for the missing acidity (needed to activate baking soda), I added two tablespoons sour cream -Instead of mixing peanut butter into the batter, I added half the batter to the pan, then added 1/2 cup peanut butter to center. I covered with remaining batter and used a knife to swirl -Instead of melted PB on top, I made a peanut butter ganache- melt 1 cup peanut butter chips with 1/2 cup heavy over a double boiler until melted and smooth.
