Chili's Salsa - My Variation

ingredients
- 1 (14 1/2 ounce) can delmonte diced tomatoes with jalapenos
- 1 (14 1/2 ounce) can whole tomatoes, including juice
- 1 fresh jalapeno, chopped
- 1⁄4 cup yellow onion, diced
- 1 teaspoon garlic, minced
- 1⁄2 lime, juiced
- 2 teaspoons dried cilantro
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon cumin
- 1⁄4 teaspoon sugar
directions
- Place jalapeno and onions in food processor and process for just a few seconds.
- Add both cans of tomatoes and remaining ingredients.
- Process all the ingredients until well blended, but do not puree.
- Store in a covered container and chill.

I'm a slightly "over-50" guy living with my wife and 2 kids in Columbus Ohio. I have been a picky eater for as long as I can remember. I'm trying to improve my cooking skills more or less in self defense. It's a control thing ... if I make it and I don't like it, I can whine and complain to myself :-)! Since cooking is not my wife's favorite activity, I'm looking for recipes I can enjoy preparing and eating while lightening her load a bit. Hopefully a win-win situation.
