- 4 (15 ounce) cans great northern white beans
- 10 cups chicken broth
- 2 garlic cloves, minced
- 2 medium onions, chopped
- 1 tablespoon oil
- 8 ounces green chili peppers, sliced
- 3 cups stewed tomatoes with juice
- 2 teaspoons cumin
- 1 1⁄2 teaspoons oregano
- 4 teaspoons cayenne pepper
- 4 cups cooked chicken breasts
- salt, if desired to taste
directions
- Soak dry beans in water for 2 hours, rinse several times.
- Combine beans, chicken broth, garlic, and half of the onions in large pot and simmer.
- Put remaining onions in oil and cook till tender.
- Add the green chili peppers, tomatoes, and seasoning to bean mixture. Add chicken and simmer one hour.
- Garnish each bowl with grated jack cheese, and green onions.
