Chicken-Stuffed Avocado Boats

"A simply delicious recipe that is paleo-friendly. If you love avocado, this is a great recipe to try. I use my air fryer for this but you can use your oven and just add cooking time to chicken until they reach 165 degrees and put the avocado boats in the oven for 5 minutes on 400 degrees."

  • Spice chicken tenders with garlic, paprika, and taco seasoning to your desired amount or use other seasoning that you prefer.
  • Cook in air fryer on 375 degrees for 16 minutes, changing trays halfway through. (cook until 165 degrees, do not overcook).
  • While chicken is cooking, chop or slice onions, mince garlic and cook on stovetop to caramelize (use cooking spray or oil). Add can of green chilis.
  • After chicken is cooked, shred chicken and add to onion mixture.
  • Chop cilantro and add, add a squirt of lime juice. Add salsa. Mix everything together.
  • Cut avocados in half and remove pit. .
  • Divide chicken mixture evenly across 8 halves of avocados. Pile high and firmly into a rounded pile on each avocado half.
  • Sprinkle shredded on top of each.
  • Cook 4 minutes in air fryer at 400 degrees.

I like to eat healthy foods and most especially vegetables and seafood. In the past, with four kids and a working mother, I had explored many family-friendly easier to prepare recipes. Now I am expanding to many different foods and really exploring those different ingredients with high health benefits.
