Chicken Pasta Salad

- 250 g pasta
- 3 -4 tablespoons olive oil
- 1 tomatoes, chopped
- 300 g broccoli, cut into florets
- 300 g skinless chicken breasts
- 2 tablespoons parmesan cheese
- pepper, to taste
directions
- Cook pasta to packet instructions (cut 1minute off the packet instructions for'al dente' however i like to give it the bite test to see if its perfect!).
- While the pasta is cooking, steam or boil your broccoli for about 15minutes, or to your liking, however i find a slightly softer texture is better with this dish.
- Grill the chicken, I used a foreman grill, but you can broil, bake or fry it, as long as its cooked!
- Now this is the fun part, when everything is done, throw everything in a salad bowl except the cheese, pour the olive oil on top (if you need more than 4tablespoons go for it, I didnt really measure it).
- Mix!
- Add pepper and cheese.
- Mix!
- Serve warm, or chilled.

Im a 20 year old male from Australia, i'm a real fitness freak/nutrition guru (or i like to think so at least! :P) however i have a love for cooking food of all kinds, usually i do my best with what i've planned out, but i also like to cook unhealthy dishes for my family (lets face it, unhealthy dishes are more fun to cook!)
a year ago, the most complex thing i could cook was those heat 'n serve pasta snacks, needless to say, i was very overweight, about 280-290lbs, i needed to change, so i adoped a radical lifestyle change, i planned all my meals, went to the gym 6 times a week, and lost 90-95lbs over a year through strict dieting (i didnt eat unhealthy food or "cheat" for 7 months)
since my mum never cooked, i had to do everything myself, i learnt to grill chicken, steam vegies, make sandwiches(good sandwiches as opposed to peanut butter and honey sandwiches :P) and bake potatoes
however a new year brings new goals.... weight gain! i gotta stack on all the muscle i lost over the past year! of course its going to be with clean food and not the traditional "super size me" bulk!
