Chicken Fried Steak W/Cream Gravy

FOR CHICKEN FRIED STEAK
- oil or shortening, for frying
- 6 -8 beef cutlets, tenderized (round or cube steak)
- 3 -4 cups seasoned flour (flour with savory seasonings of your choice or Seasoned Flour)
- 3 eggs
- 2 cups milk

FOR CREAM GRAVY
- 1⁄4 cup flour
- salt and pepper
- 4 cups milk
- 1 -2 tablespoon dripping, included the cooked bits
directions
- Heat about 1/4-1/2 inch of oil or shortening in a frying pan.
- Beat eggs then combine with milk.
- Dredge tenderized beef cutlets in flour, then egg-milk wash, then a second time in flour.
- Place dredged cutlets into heated oil and fry until golden, about 10 minutes.
- Turn steak over and cook for another 5 minutes or so until both sides are golden.
- Remove to a plate lined with paper towels and allow to drain.
- TIME TO MAKE THE GRAVY: Drain all but 1-2 tablespoons of drippings from the frying pan; leave all the cooked bits you can.
- Combine flour and seasonings with milk, then pour into the pan with drippings and bits.
- Continually stir/whisk the gravy over medium heat for 10-15 minutes, or until desired consistency.
- Taste and add more salt or pepper if necessary.
- Serve generously over each piece of chicken fried steak.
- Sop up any extra gravy with a biscuit.

Good flavor and fairly easy to make. My whole family enjoyed it. My only complaint with this recipe is the waste. I generally cook for and used about 3 pounds of meat and there was way to much egg/milk mixture--threw lots down the drain when I was done. The amount of gravy was good though--need some to eat the biscuits with!!!

Delicious recipe. For the seasoned flour, I adjusted the quantities, and left out the paprika, to make three cups of my <a href="/108411">Flour Shake and Bake for Chicken</a>. I used a turkey baster to drain the excess grease from the pan to leave all the yummy browned bits for the gravy, and used half milk and half cream instead of all milk. After draining the browned steaks on paper towels I put them on a pie plate in a low temperature oven to keep warm while I was making the gravy. Delicious served with creamy mashed potatoes, peas, buttered carrots, and cole slaw. Think I will try <a href="/17867">Homemade Biscuits</a> the next time I make this steak, because it does not have any sugar in the dough, and cut the biscuits into squares or triangles to prevent rolling the scraps of dough which makes biscuits tough. Will definitely be on the menu again. Thanks for posting. :) :) Burnice

good recipe and extremely easy, how ever i have to admit i always just use white pepper gravy instead of the cream gravy listed in the recipe (more or less cause my husband prefers it) but still very good and extremely easy for people who are making chicken fried steak for the first time. thanks for posting ^_^

We had this for dinner over the weekend. Hubby did the frying in our fryer instead of a pan, and I made the gravy. We cut the recipe in half, and I didn't use any drippings in the gravy (since we were using our big fryer) but the gravy was still really tasty. I served it with Jalapeno Cheese Grits. All in all, we really enjoyed this recipe, and will make it again. thanks for posting.
