directions

  • In small bowl, mix mix first 4 ingredients.
  • Add chicken and marinate for 15 minutes.
  • In skillet, cook onion and chicken with marinade for 3 minutes.
  • Add peppers, saute for 3 minutes.
  • Stir in salsa.
  • Divide among tortillas.
  • Top with cheese.
  • Roll up and serve.

  2. Excellent! "Mighty Good" was the comment from hubby. The only thing I did differently from the recipe is heat up the tortillas in the microwave before using. I also combined a red pepper and a green pepper instead of using the same color and I also served with sour cream. This is a keeper and one I'll be doing again. Have lots of napkins on hand though because they're quite sloppy.
     
  3. yum. I like to heat the tortillas first. To do this, I heat a nonstick pan on medium heat, and then one at a time, put the tortilla in the pan for maybe a minute (flip if necessary for a minute). A very small amount of time makes them nicely warm AND you don't have to add extra oil or anything.
     
  4. This recipe was a huge hit with my entire family. I found the recipe to be easy and quick. I substituted a 13 oz can of chicken breast for the fresh chicken which cut down on preparation time. I also cut the cumin down to 1/4 tsp. It was delicious and was also great as leftovers.

  1. Used chicken tenders; added 1/2 teaspoon salt and 1 tablespoon olive oil to lime mixture; cooked in a cast iron skillet.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
