Chicken Enchiladas

  • Combine chicken, 1 cup of cheddar cheese, soup, onion, salt, and pepper; set aside.
  • In a sauce pan, combine tomato sauce, chili powder, cinnamon, and olives. Simmer, uncovered for 5-10 minutes.
  • Meanwhile, spoon 1/3 - 1/2 cup of chicken mixture down the center of each tortilla. Roll up; place seam side down in a greased 9x13 pan.
  • Top with tomato sauce mixture; sprinkle with Monterey Jack cheese and remaining cheddar cheese.
  • Bake uncovered, at 350 degrees for 20-25 minutes or until heated through.

  1. I was confused enough by the cinnamon/chili/tomato sauce that I had to try this and I'm glad I did! This was good and easy to prepare. I would think twice about the servings, though- most people I know are going to eat more than half of a tortilla's worth of enchilada!
     
  2. I cut this recipe in half for just the 2 of us & used cream of celery soup in place of the mushroom variety! Also used a colby jack cheese, but other than that, the ingredient list was followed, & we had an enjoyable chicken dinner! Thanks for the nice recipe ~ A keeper! Location? Iowa (all my life) History? I grew up in Iowa and have only moved cities once and I don't think I'll ever leave. Education status? I am a graduate of a business college (2009) with an Associate's degree in Applied Sciences. I also graduated from high school in 2006 with a diploma. Employment? I've worked in a various amount of industries and jobs. From 2004-2006 I was a paper carrier for a local newspaper. From 2007-2008 I was a telemarketer at a business to business agency. In the end of 2008 I was a houskeeping assistant for a college. From 2009- now I've been a furniture specialist for a cleaning company. Interests? I love cooking, weather it is for a small or large number of people. Besides cooking I love to worship God and be with all of His children. I also like taking photos and listening to music!! My passions? I love to ride horses and be around animals of any kind. I also love to sing. ( I want to learn how to play guitar, flute, violin, and piano-if I ever have the time.) I write compositions, but I need to learn to play an instrument better so I can have them on paper looking (and sounding) good. I also love architecture and design. I like planning out a blank space and imagining what could be inside it. Or looking at an old run-down house and seeing the potential in it. Pet peeves? Probably too many to list. But the list is slowly diminishing with time and patience That's a little about me.
