- 6 boneless skinless chicken thighs
- 2 tablespoons olive oil
- 1 tablespoon coriander
- 1 tablespoon cumin
- 1 tablespoon paprika
- 1 tablespoon cayenne
- 1 teaspoon onion powder
- 1 teaspoon oregano
- 6 garlic cloves
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 lemon, juice of
- 6 ounces tomato paste
- 3 tablespoons Greek yogurt
- 8 7⁄8 ounces of stonefire garlic naan bread
- 1⁄2 head iceberg lettuce, shredded
- 1⁄2 cucumber, sliced
- 1 cup plain Greek yogurt
- 2 teaspoons cumin
- 1 pinch salt and pepper
- 1 garlic clove (Minced)
- 1⁄2 lemon, juice of
directions
- On a cutting board, pound the chicken thighs flat and to 1/2" thickness.
- Put the chicken in a large mixing bowl.
- add the Olive Oil to the chicken and mix.
- Next sprinkle the Coriander, Cumin, Paprika, Cayanne, Onion Powder, Salt, Pepper and Oregano into the chicken.
- Add the six cloves of minced garlic.
- Mix the chicken and the seasoning together before adding the wet ingredients.
- Add the Lemon Juice, Yogurt and Tomato Paste.
- Mix the chicken until fully coated. Marinate for at least 1.5 Hours.
- Preheat the grill for 375-400 Degrees.
- Add the chicken and cook until the outside is charred and the inside temperature is at least 165 degrees.
- Slice the chicken and serve on a warm piece of Naan, Cucumbers, Lettuce, and a Yogurt Sauce.
- Yogurt Sauce: Mix 1 Cup of Plain Greek Yogurt. 2 Teaspoons of Cumin, Pinch of Salt and Pepper, 1 Garlic Clove Minced, and Juice from 1/2 a Lemon.
