Ingredients: 1 tablespoon olive oil; 2 medium onions, chopped; 4 garlic cloves, minced; 2 (4 ounce) cans chopped green chilies; 4 cups chopped cooked chicken; 2 teaspoons ground cumin; 1 1/2 teaspoons dried oregano, crumbled; 1/4 teaspoon cayenne (depending on taste) or 1/4 teaspoon crushed red pepper flakes (depending on taste); 3 (16 ounce) cans great northern beans, drained & rinsed; 6 cups chicken broth; 3 cups grated monterey jack cheese; salt; pepper; sour cream

"I've been searching for something close to Olga's Chicken Chili. Haven't tried yet but had to work hard to find a creamy cheesy chicken chili recipe and there wasn't one on recipezaar that fit the bill... so here is what I found. Hope you enjoy. I'll try it tomorrow night."

ingredients

1 tablespoon olive oil
2 medium onions, chopped
4 garlic cloves, minced
2 (4 ounce) cans chopped green chilies
4 cups chopped cooked chicken
2 teaspoons ground cumin
1 ¹⁄₂ teaspoons dried oregano, crumbled
¹⁄₄ teaspoon cayenne (depending on taste) or 1/4 teaspoon crushed red pepper flakes (depending on taste)
3 (16 ounce) cans great northern beans, drained & rinsed
6 cups chicken broth
3 cups grated monterey jack cheese
salt
pepper
sour cream

directions

Heat oil in large heavy pot to med/high.
Add onions & saute until translucent, about 10 minutes.
Add garlic, chiles, chicken, cumin, oregano, and hot pepper.
Saute 2 minutes.
Add beans and chicken broth.
Bring to a boil, reduce heat and simmer 2 hours or more.
Add 1 cup of grated cheese.
Stir until thick and melted.
Season with salt & pepper. Serve with remaining cheese and sour cream.

We made this chili for lunch with our friends and it was a big hit. I made a chicken chili recipe many years ago that I found in a magazine of my mother's and haven't been able to find one close to it since then. This is it! I didn't put the cheese in because I didn't have any, next time I will add some. Thank you!

My family and I absolutely LOVED this chili!!! I couldn't find the great northern beans, so I used white kidney beans instead. My husband used it at work for a chili feast day, and everyone said it was the best!
