Cheesy Beef and Tomato Bake

  • heat oven to 400.
  • Spray 8-inch square baking dish with nonstick cooking spray.
  • Cook ground beef in large skillet over medium high heat until thoroughly cooked, stirring frequently.
  • Drain.
  • Stir in soup mix, chopped tomatoes, rice and water.
  • Bring to a boil.
  • Pour into sprayed baking dish.
  • Cover tightly with foil.
  • Bake at 400 for 20 to 25 minutes or until liquid is absorbed and rice is tender.
  • Uncover; top with tomato slices; sprinkle with cheese.
  • Bake uncovered an additional 10 minutes or until cheese is melted.

  2. We have a tomato plant in our back yard and have been looking for recipes incorporating them so when I saw this, I really got my hopes up and let me tell you it did not disappoint. It is very easy to make (and tasty too) and the ingredients are simple and inexpensive. I have 2 picky little eaters at home and not only were there no leftovers but they both were asking for more (and that NEVER happens). We will definatly be having it again. Thanks.

<p>Hello! I am in Nebraska with three of my four children and a husband of 20 yrs.(the fourth child is in the Army stationed at Fort Bragg) I get to be a stay home mom and LOVE it.(which gives me time to look for new recipes...LOL) We like to camp, play sports,watching movies and lots more. I have a fairly large collection of recipe books, but then you can't ever have enough...right? I came across this site(recipezaar) and instantly fell in love with it.
