Cheeseburger Macaroni

"This is a recipe I found, lost and found again. I got it off a can of stewed tomatoes. DH really likes it. It's simple and a one pot meal. I had to be out of town for a couple of weeks and he made it twice. Posting it here for safe keeping. Feel free to add more spices, green peppers, garlic, etc. The original recipe does not even call for salt and pepper and I always add more cheese."

  • Brown beef and onion in large skillet; drain. Salt and pepper to taste. Add undrained tomatoes and one cup water; bring to boil. Stir in macaroni. Bring to boil; reduce heat. Simmer, covered, ten minutes or until macaroni is done, stirring once. Sprinkle cheese evenly over top, cover until cheese is melted.

  1. I was using this recipe as a side dish to go with a porkchop recipe so I substituted mushrooms for the meat. My DH really liked it. (He's a big fan of a similar recipe that we call goulash, so I was pretty sure he would enjoy it.) What surprised me was that I liked it a lot also. When I sauteed the onions and mushrooms I cooked them until they were carmelized, which enhanced the flavor. DH liked it so much that he microwaved some left-overs for a late night snack.   2. This was just the thing for lunch. I had just the right amounts of everything in the fridge to make 2 servings. I used just 1/4 cup of onions and added a fair sprinkle of garlic pepper. It came out with a lovely flavor and couldn't be much easier to make. It's very filling and a great warmer for a cold day. I'm very glad that I tried it. :D

Well it is December 20, 2009 and DH and I are sitting on our lanai having a cocktail. Just got done with eating some chicken wings, courtesy of a Recipezaar recipe. They were delicious, of course. <br>The picture above is yours truly with one of our two dogs, Fritz a Cairn Terrier. Our other pooch is Kelly, a Miniature Schnauzer. We will try and post a picture of her at a later date. <br>I should have made my name Naturelovers, because my DH is enjoying this site as much as I do! <br>We are retired and enjoy the outdoors here in FL, like boating, fishing, beaches and gardening. <br>Between us we have 6 children, 8 grandchildren and 2 great-grandsons and 1 great-granddaughter on the way. I have always enjoyed cooking and Recipezaar has really opened up new horizons. <br>I am well noted for finding a great recipe that is a big hit and then losing it. I'm hoping by joining Recipezaar, I will lose that reputation. I remember one recipe, about 48 years ago, and yes I still remember it. I found the recipe in a local newspaper and it is gone. It was for a German dish, sauerbraten, not to vinegary, no gingersnaps and served with dumplings. Oh my, was it good, but alas, gone.
