Cheap & Easy Potato Soup

- Peel and dice potatoes (the smaller you dice, the faster they cook).
- Place in pan with enough water to cover potatoes.
- Cover and cook potatoes until done.
- Drain water and return to pan.
- With a potato masher, mash 1/2 of the potatoes (this will serve as your thickener).
- Add cream of celery and milk. Stir and heat on low, stirring frequently until desired temperature is reached.
- Serve with fresh chopped onion and a sprinkle of ground red pepper if desired. (this really makes it yummy).

This was a good recipe. I did make some changes though. When the potatoes were about done boiling I sauteed 2 chopped celery & carrot sticks and the 1/4 cup chopped onions in some olive oil. I mashed 1/2 the potatoes, added the milk and cream of celery soup and added 1 tsp garlic powder, 1 tsp lemon pepper, 1 tablespoon parsley flakes, 2 chicken bouillon cubes and some ham I had on hand. When it was all nice and hot and in the bowl I topped it off with some shredded cheddar cheese. Kids ate it all, I was hoping I could take a bowl to work the next day but ended up with a sandwhich. Next time I will double the recipe.
