Cauliflower and Almond Soup

ingredients
- 1 leek, white part only, chopped
- 2 cloves garlic, crushed
- 4 ounces cauliflower, chopped
- 2 potatoes, diced
- 6 cups chicken stock
- 1⁄2 cup blanched almond, chopped
- 1⁄3 cup chives, chopped
- cream, to serve
directions
- Add first 5 ingredients to crockpot and cook on high for 3 hours.
- Add almonds and use a hand held blender to puree to soup.
- Add half of the chives.
- To serve, laddle into bowls, drizzle with cream and sprinkle with remaining chives.
