- 500 g carrots
- 1⁄2 cup dates, chopped finely
- 1 orange, juice of
- 1 tablespoon extra virgin olive oil
- 1⁄2 teaspoon ground cumin
- salt and pepper
- 1⁄2 cup coriander, torn
directions
- Soak the dates in the orange juice.
- Grate the carrots coarsly.
- Toss with all remaining ingredients.
