Carrot Rice with Peanuts

ingredients
- 1 cup long-grain rice or 1 cup basmati rice
- 2 cups water
- 1⁄4 cup roasted peanuts
- 1 tablespoon butter
- 1 onion, sliced thinly
- 1 teaspoon gingerroot, minced
- 3⁄4 cup grated carrot
- salt
- pepper
- cilantro, to garnish (optional)
directions
- Combine rice and water in a medium saucepan.
- Bring to a boil over high heat.
- Reduce heat to low, cover with lid, and allow to steam until tender/cooked (about 20 minutes).
- While rice is cooking, pulverize peanuts in a blender and set aside.
- Melt butter in a large skillet over medium-high heat.
- Saute onions until golden brown.
- Stir in ginger, carrots, and salt to taste.
- Reduce heat to low and cover to steam 5 minutes.
- Stir in pepper and peanuts.
- When rice is done, add it to the skillet and stir gently to combine with other ingredients.
- Garnish with chopped cilantro and serve hot.

I had this this afternoon for lunch. I used 2 3/4 cups water, 3/4 tsp salt and 1/8 tsp pepper. I used about 1 medium-sized carrot. Instead of the butter, I used cooking oil. I liked this recipe except for the peanuts. What I found was that even a pinch of the powdered roasted peanuts imparted a very strong peanut taste to the rice(rather TOO strong for me and my parents). Hence, I omitted the peanuts. I find this rice perfect without them. The fact that it is low cal is simply great! Thanks, Anu!
