Carrot Patties

ingredients
- 1 1⁄2 cups grated carrots, grate with the large holes of a cheese grater (about 3)
- 3⁄4 cup finely chopped celery (2 stalks)
- 1⁄2 cup grated onions or 1/2 cup minced onion, squeeze-dried on paper towels
- 1⁄4 cup breadcrumbs
- 2 large eggs, beaten
- 1⁄2 cup fresh parsley, finely chopped
- 1 teaspoon coarse salt
- 1⁄4 teaspoon pepper
- 1⁄2 cup drained yogurt
- nonstick cooking spray
directions
- Combine carrots, celery, onion, bread crumbs, eggs, parsley and salt and pepper in a medium bowl. Press about 1 1/2 tablespoons of the mixture between hands to form the patties.
- Form about 16 patties and place on a tray.
- Heat a large nonstick skillet over medium-low heat. Coat with cooking spray.
- Cook patties in 2 or 3 batches, until golden brown, 3-4 minutes per side. Serve hot with drained yogurt.

I had high hopes for this one! I don't know what I did wrong but mine completely fell apart and it took a really long time for mine to brown on both sides. I halved the recipe exactly and even drained the onions. I ended up with about 9 patties. I even tried cooking on fry pan until brown on one side and then sticking in the oven for about 10 minutes at 450. They were a little bit better, but still fell apart. The taste was good. I used cilantro instead of parsley and 1 minced clove of garlic. I may attempt some other time. I also used my food processor to grate the carrot - maybe the chunks were too big?

Made this today for lunch for 1. I split the recipe in half (kind of). I used green onions so I didn't need to squeeze dry them. Then I used 2 eggs instead of 1. I didn't have any parsley so I skipped it. Finally, I accidentally mixed in the yogurt with the rest of the mixture! That's what I get for not reading closely. Regardless, these were yummy. I ate them plain, topped with a little extra fresh ground pepper.

I began cooking as a kid with my mom. I cook mostly Mexican food, but my best recipes are the ones that I improvise at the last minute! Especially desserts, which I love to cook, but always forget to write down.
