Caramel Apple Ice Cream (Ice Cream Machine)

"Made with real cream, sugar, applie pie filling, nuts and caramel. A great treat and wonderful way to ring in the fall weather. I put this together because I was trying to make pumpkin ice cream but every store around was out of canned pumpkin! Carmel Apples seemed like the next best thing!"

  • 1 cup whipping cream
  • 23 cup half-and-half
  • 23 cup sugar
  • 2 teaspoons vanilla
  • 1 tablespoon lemon juice
  • 3 tablespoons caramel sundae syrup (I use smuckers because it is thin)
  • 10 ounces apple pie filling (diced smaller than a chocolate chip)
  • 12 cup roasted peanuts (chopped)
  • 18 teaspoon salt

directions

  • Combine cream, half/half, sugar, vanilla and lemon juice in a bowl and whisk. Add caramel sauce to mixture and mix well.
  • In a separate bowl, combine chopped apples, peanuts and salt and mix well.
  • Place cream mixture in electric ice cream machine and turn on for 25 mintues.
  • Gradually add apple/nut mixture at the end of freezing for an additional 10 minutes.
  • Transfer to airtight container and freeze for 2 hours before serving.

I love to cook. I used to hate it. That was before I became a stay - home mom. I made foods for me and my husband as newlyweds and I know he choked some of it down with a smile. He still jokes to this day about when I made spaghetti and I didn't heat the sauce up. I just poured it over the hot noodles thinking they would warm the sauce - not so! Cold dinner - ick! Well I've gotten a lot better and my ultimate goal is to be the best cook in my family. I like to try new things and especially try to find recipes for foods that most people do not like. My rating system 1 star = will not eat again, will not make again. 2 stars = will not make again, but would eat it, if someone else made it for me 3 stars = Good, not the best I've ever had, but good flavor. 4 stars = Very good. I will make it again on occassion and would even recommend to others. 5 stars = Excellent. The best of it's kind that I've tasted, easy to make, others liked it too. Will make it again and will recommend to others.
