Cajun Sauteed Chicken

- 4 boneless skinless chicken breasts
- 1 1⁄4 teaspoons cajun seasoning, divided
- 1 1⁄2 tablespoons olive oil
- 1⁄2 cup chopped onion
- 1⁄3 cup chopped green pepper
- 1 (14 1/2 ounce) can cajun-style stewed tomatoes or (14 1/2 ounce) can Mexican-style tomatoes
- 1 1⁄2 teaspoons minced garlic
directions
- Rub the chicken with 3/4 t of cajun seasoning mix. In a skillet heat the oil and brown the chicken for 2 minutes per side. Remove chicken and set aside.
- Add the onion and green pepper to the skillet. Saute till they are softened. Add the tomatoes, garlic and remaining cajun seasoning. Cook that for 2 or 3 minutes.
- Return the reserved chicken, cover and simmer for 15 minutes (I usually do 30 minutes) till chicken is cooked through.

Thanks for making catsoplenty Recipezaar's "Chef of the Day." I needed a quick entree having on-hand ingredients, and this recipe does that and more. Easy to make and tastes delicious--the rice suggestion is right on--a great combination with the chicken and sauce. Thanks for sharing--your other recipes sound good too, and I plan on trying them!

This site has given me plenty of new recipes to try!! <br /><br />My family and friends probably think I'm famous for my baby-back ribs, cajun buttermilk chicken, my oh-so-easy chicken riggies, taco pizza, chicken wing pizza, artichoke pizza........and a few more!! Some I got from other sources........the pizzas are just my version after having them from local pizzerias. <br /><br />I don't have a favorite restaurant. So many are good.</p>
