Cabbage With Potato Slices Casserole

"I was looking for something a bit different to make with cabbage for our family reunion this year, which was yesterday, 9/21/08. I came across a few different recipes and none of them seemed to be "just right." So I tried some ideas from a few of them and came up with this one. I doubled the recipe and there were only side scrapings left on the pan at the reunion. I thought it tasted really, really good. Try it for yourself. If you precook the potatoes and cabbage the day before it doesn't take long at all to put it all together."

  • Cook whole potatoes until almost done.
  • Let cool,.
  • then slice on the thin side and set aside.
  • Saute onion in butter.
  • Add soup, dressing and milk.
  • and mix well.
  • Combine with cabbage.
  • Coat a 3 quart baking dish with cooking spray.
  • Place 1/2 the cabbage in the bottom,
  • then 1/2 the potatoes
  • and then sprinkle with 1/2 of each
  • of the cheeses.
  • Repeat.
  • Bake at 350 for 30 minutes or
  • until potatoes and cabbage are tender.

My husband and I have lived in NJ for the last 28 years. We have 2 sons, both grown and no longer living at home, only one toy fox terrior dog now, 2 parakeets and 2 finches! I enjoy finding, using and sharing recipes I have found on the net. Also camping, working outside in the yard, family and good friend get togethers and just relaxing. This does not mean cleaning, lol.
