  • 1 12 cups butter, room temperature
  • 12 cup sugar
  • 1 teaspoon almond extract
  • 3 cups flour, sifted
  • 1 12 cups almonds, finely chopped

directions

  • blend butter and sugar.
  • add extract.
  • then flour.
  • work fast, shape into logs and roll into grated almonds.
  • bake at 350 for 15 to 20 minutes.

  1. These cookies will definitely be making an appearance on my holiday cookie trays! Buttery. light, slightly crispy and the almond flavoring is not overwhelming (other extracts should work great too). They look and taste like cookies you'd pay $20+ per pound for, in the finest bakery! Notes to self for next time, I made a half batch and got 32 cookies using my second to smallest cookie scoop (about 1-inch). Started with 3-4 oz. of sliced almonds and chopped them on fine with hand-crank nut grinder. Baked for 17 minutes until the edges just started to brown. Start to finish in just under an hour -- mahalo for posting! Made for PAC Spring 2010.
